- hulling : removal of the parchment from the green beans.
- sizing : the coffee is then sized into 8 different categories, including the famous Kaua'i Peaberry.
- density separation : 5 density separators work in unison to classify the coffee of the same size by density.
- color sorting : electonic color sorters are used to look at each and every bean, detecting the slightest hue of decoloration and rejecting it from our first quality coffee.
